Springform Pans
The single pan most used in the recipes on this website is the springform pan. Delicate tortes, cakes and tarts are sometimes difficult to remove from the pan without breaking. The springform pan solves this problem with its removable rim which fits snugly into the grooves of its bottom.
Springform pans are now available from most retailers. The best quality pans are of tinned steel. If you are buying a springform pan set, it will have three interchangeable bottoms: a flat bottom (either smooth of waffle-textured), a flat bottom with a central tube, and a fluted bottom with a tube. Most of the time the flat bottom is the one to use, although the others are handy.
Recipes call variously for springform pans of 8-inch, 9-inch and 10-inch sizes. Each pan is about 2½ inches deep.
Gugelhopf or Turk’s Head Mold
The traditional mold for making Gugelhopf is a flute pan with a central tube. The tube conducts heat so that heavier doughs and batters will cook well in the center. A heavy-gauge tinned steel pan is the best to buy. Recipes on this website are design for a 9 to 10-inch diameter Gugelhopf mold.
Rehrücken (saddle of venison) Mold
This pan is used for the rich chocolate nut log. It is ribbed and measures 12 inches long and 4¾ inches wide. You may also use this mold for other cakes, as well as for bread.
Loaf Pans
The following loaf pans are used throughout the website for butter cakes and some yeast bakery. Sizes 9 x 5 x 3 inches, 10 x 5 x 3 inches, 13 x 5 x 3½ inches and 14 x 4½ x 2¾ inches.
Jelly Roll Pan
If you make spongecake rolls often, you will want this pan especially designed for the job . The one-inch sides keep the batter from running off as it would with an ordinary baking sheet. If no jelly roll pan is available, construct your own, using heavy aluminium foil which is then set on a baking sheet. Size: 16 x 11 x 1 inch high.
Baking Sheets
You will need one or more of these . Any size is suitable to small pastries; a 16 x 14-inch baking sheet is perfect for Strudel and other recipes.
