Baking the Cake
After preparing the batter, pour it immediately into the prepared pan or mold. To distribute the batter evenly, push it gently to the corners and sides with a spatula until it is level, but never pat it down or try to even it by knocking or shaking the pan: you want the batter to keep its fluffiness.
Slide the pan into the oven, placing it in the middle of the rack for even heat distribution. Since a draft may cause the cake to deflate while it is baking, do not open the oven for at least 30 minutes.
